Initial preparation
In a shallow bowl, add finger millet flour – 1 cup, rice flour – 1/2 cup, semolina – 1/2 cup. Mix these three ingredients well. Now, take 4 cups of water, add required amount of salt and keep the dough covered without lumps. Rest it for five minutes. Note that, all the ingredients should be measured in the same cup.
Masala
Next put a sauce pan on the stove and add 1 table spoon of oil, mustard seeds – 1/2 spoon, cumin seeds – 1/2 spoon, finely chopped red onion – 2, finely chopped green chillies – 1, grated ginger – 1 spoon, fenugreek leaves – 1 bunch. Saute well. Once the onion becomes glassy, add grated medium size carrot – 1, finely chopped coriander leaves – a little, salt – 2 pinches, fry all these ingredients well and mix this into the batter prepared already. Mix well. This batter should be in a flowing consistency. If it is thick, you can add a little more water according to the need.
Dosa
Put the dosa tawa in the burner and when the dosa tawa dries well, grease it with oil and take the ready batter with a spoon and spread it evenly. Make sure that the dosa is spread evenly and thinly. Keep the burner on medium flame and let the dosa brown well and then flip it over. Now super crispy finger millet dosa is ready to serve.
